Okay, since nobody responded to this I went ahead and just did it.
The reason why we did this is because I got a new grain mill and bought a 50 lb bag of field corn. Then I discovered that I should have gotten popcorn instead. Not wanting it to go to waste decided to try Hominy. The old timers used to use lye water with it, but I really didn't like the idea of using lye on my food, so I found a different recipe where they used baking soda in place of the lye. Here is the recipe:

1 quart shelled corn
2 quarts water
2 tablespoons baking soda
Wash corn thoroughly, add soda and water and soak overnight. In the morning bring to a boil in the same water in which the corn has soaked. Cook for three hours or until hulls loosen. Add more water as necessary during cooking. Drain off water and wash corn in clear water rubbing vigorously until all hulls are removed. Bring to a boil again in clear water and drain off water. Repeat again. Add 1 teaspoon salt to each quart of hominy. Use an enamel or stainless steel kettle for cooking the corn.
I canned the hominy when I was done. Make sure an only fill the jars 3/4th full because, because they swell a lot more while canning.
It took a good portion of the day to get this all done, but it tasted like hominy when i was done!
